Mutenka Ramen Kanade was established on February 26, 2022 in Ukiha City, Fukuoka Prefecture, about 1.6 km from Chikugo Oishi Station. The owner is self-taught in ramen. The soup and sauce are chemical-free, and no yeast extract is used. The only additive is the brine used for the noodles. The old store will close at the end of January 2023. Relocation to Tokyo

When you enter the restaurant, you first purchase a meal ticket from the ticket vending machine. The main menu items are: Shoyu (soy sauce) ramen 930 yen, Shiora ramen 930 yen, chashu (pork) donburi 400 yen, gohan (rice with egg) 350 yen, and zosui (rice porridge) 150 yen.

Buy a meal ticket and sit at the counter for a while and wait! Oh, I’m so hungry 🥴!

After a long wait, the “Shoyu Ramen” is ready!

The soup is a light, clear, non-chemical soy sauce flavor. The broth is made from chicken bones, pork bones, kelp, dried bonito flakes, shiitake mushrooms, dried sardines, green onions, and other flavorful vegetables. The broth is rich in flavor with a hint of soy sauce. It has a Japanese taste with little oiliness. The soup stock has a mild, mellow, and deep taste without being bland. It is a very tasty dish that is full of the producer’s and the maker’s heart!

The noodles are straight, medium-thin type. The noodles are boiled in a large pot and drained off with a flat colander. The noodles are boiled to a very soft consistency, and there are few examples of noodles that are this soft and tender. The fluffy noodles match well with the soup stock.

It was deliciously finished! I am also interested in the “Shiraa Noodle” that Mr. Shio-Tetsu praised so highly. Thank you for the food!
